Is it possible that change of OPT start date from the date requested by USCIS?

I don't think 11/27 will affect your H-1. If it is the H-1B visa you are referring to, the application starts in April and people receive start dates in October, so as long as ur EAD ends in/after October then you are fine.
You would have a problem with the 60-day grace period after your OPT if your OPT ends before August.

I do not know why they gave me the date I asked for. The international student office at my school said they have never seen an EAD with a date previous to the approval date.
As for your concern, according to advisors at my school, it is not a problem. As long as they are processing your OPT and you submitted it during the semester you were about to graduate then you are fine. When you are requesting dates, you have to adhere to the 60-day grace period but once it is submitted, it is out of your control. They just advise that you do not leave the country to prevent any complications.

My OPT start date is May 26. It's still pending. So I guess the date when my opt is approved will be my start date. Am I right?

If your OPT application has not been approved, it may be possible to change the start date.
